If you leave and exit ck2 AGOT, all regents get changed. It was really annoying to me as Eddard as I installed Jon Targaryen as king after Robert's rebellion, and wanted to rule as regent, but I quit, then when I came back pycelle was the regent so I had to plot to restore myself. My reign as regent was pretty fun though, I basically did what the lannisters did from 284-298
