In episode 35 we hear a long list of violent events in Amestris' history. The very first of which happened in 1513. We know that all of these events, even the founding of the country itself, were all part of Father's plan. And we know that the show takes place in the year 1916, because 1915 is what's on Hughes' gravestone, and the promised day is the following spring. So, it has been AT LEAST 402 years since Xerxes. And that's assuming that Father went IMMEDIATELY from the fall of Xerxes to the founding of Amestris, with no time in between.
