I don't think the Immortals even looked like that. I'm not a historian obviously, but from what I remember they weren't suppose to be some sort of super heavy infantry with tons of armor. They had relatively light armor I think, and trained to use bow and spear or bow and sword. That's what I remember at least.
Obviously I'm not surprised how they look here, CA takes a lot of "artistic liberty" as we all know it.

This runs surprisingly well? if I do a battle of this size against a cpu enemy my fps drop below 40, sometimes below 30. Did they change anything to the engine?

I'm going to be honest seeing as most people disagree. I actually really like the soldier models. Both Roman and Eastern. I feel like it gives it a grittier, maybe even a bit more realistic look.
